Artichoke omelet

Frittata ai carciofi

Ingredients

3 jars Grand’Italia Carciofi (artichokes)
1 small onion
2 tablespoons finely chopped parsley
4 slices boiled ham in ribbons
8 eggs
3 dl milk
1 dash olive oil
1 pinch salt
1 pinch pepper

Preparation method

Step 1Preheat the oven to 180.
Step 2Beat the eggs and milk together. Fry the onion rings in a pan with a dash of olive oil. Add the ham, parsley, onion and carciofi to the egg mixture. Season with salt and pepper.
Step 3Pour the egg mixture into a square, greased oven dish of approx. 20 x 20 cm with high sides. Bake the frittata in the preheated oven in approx. 20 to 30 minutes until cooked. The frittata is ready as soon as the top is firm.
